Premium Galician Burguer

GALICIAN BURGER WITH PAN-SEARED FOIE GRAS, CRANBERRIES, AND REDUCED SIRLOIN JUICES

Ingredients:

  • 1 Galician burger
  • 1 Slice of fresh foie gras (60 g)
  • Homemade berry compote (cranberries, strawberries, and raspberries, not too sweet)
  • 100 ml sirloin juices
  • 2 roasted wild asparagus spears

 

Preparation:

  • In a very hot frying pan with a tablespoon of oil, brown the burger well for 4 minutes on each side. After 6 minutes, add the slice of foie gras, seasoned with salt and pepper, to the pan.
  • Arrange the meat on a plate. Place the foie gras on top and, to add volume, cross the roasted wild asparagus over the meat.
  • Finish with a drizzle of the berry compote and a tablespoon of reduced sirloin juices.
