Free-range chicken
FREE-RANGE CHICKEN BURGER SERVED WITH ROASTED AND FRIED PEPPERS
Ingredients:
- 1 Free-range chicken burger
- 1 Ripe avocado
- 1/2 Fresh spring onion, finely chopped
- 1 Grated tomato
- 1 Lemon
- Salt and pepper
- 3 Gernika peppers
- 2 Hand-roasted Lodosa Piquillo peppers
Preparation:
- Peel the avocado and mash it with a fork until smooth. Add the tomato and finely chopped spring onion, season it with salt and lemon juice, then set it aside. Optional: add hot chilli flakes
- In a very hot frying pan with a tablespoon of oil, brown the burger patty on both sides and cook it thoroughly, as it is white meat (5 to 6 minutes per side).
- Place a large spoonful of the guacamole on a plate and place the burger on top, giving it volume. Garnish with the grilled piquillo peppers and the fried Gernika peppers.
