WITH ASSORTED SAUTÉED PEPPERS AND GUACAMOLE

FREE-RANGE CHICKEN BURGER SERVED WITH ROASTED AND FRIED PEPPERS

Ingredients:

  • 1 Free-range chicken burger
  • 1 Ripe avocado
  • 1/2 Fresh spring onion, finely chopped
  • 1 Grated tomato
  • 1 Lemon
  • Salt and pepper
  • 3 Gernika peppers
  • 2 Hand-roasted Lodosa Piquillo peppers

Preparation:

  1. Peel the avocado and mash it with a fork until smooth. Add the tomato and finely chopped spring onion, season it with salt and lemon juice, then set it aside. Optional: add hot chilli flakes
  2. In a very hot frying pan with a tablespoon of oil, brown the burger patty on both sides and cook it thoroughly, as it is white meat (5 to 6 minutes per side).
  3. Place a large spoonful of the guacamole on a plate and place the burger on top, giving it volume. Garnish with the grilled piquillo peppers and the fried Gernika peppers.
