The dream was ambitious, but complex. Creating a product like this meant experimenting and paying the utmost attention to countless factors in order to achieve the authenticity we sought in both flavour and texture, which had almost been lost to time.
“The true aristocracy of flavours, aimed at connoisseurs like us, like you”.
One thing was always clear to us. We would either create the perfect burger, recovering the splendour of those flavours and textures, or we would abandon the project because it wouldn’t have been worth it.
And we did it!

We research, verify, and select only those farms that meet animal welfare standards throughout the animals’ entire lives.
Their diet, rest times, peacefulness…
The way in which each animal is raised is a determining factor in the quality, flavour, and textures we seek to achieve.
A natural diet and a pleasant, stress-free life result in more tender meat and better marbling. With all this in mind, we ensure that the livestock we use live and graze outdoors, in natural conditions. Just like in days past.
That is why seeking out and verifying the producers we work with, as well as maintaining a close and friendly relationship with them, are key elements for Burgués and the first step towards realising our dream.

One of the things that sets us apart and underpins our dream’s success is that we do not produce meat and then use the offcuts to make our burgers. We meticulously select the finest cuts, EXCLUSIVELY for crafting our burgers.

We select the most ‘burger-worthy’ cuts to craft our recipes, which are carefully researched, refined, and tested. We craft our burgers by carefully balancing every step to preserve their authentic character.
Only in this way can we ensure that the texture and flavour remain true to what a good cut of meat has always conveyed and should convey, since time immemorial.

In our quest to recover and preserve flavours and textures that should never have been lost, we do our research and incorporate cutting-edge technology, constantly innovating to ensure that our burgers retain what makes them unique.
Cryogenic freezing
As a result of this research and exploration to keep the Burgués spirit intact, we use the most advanced technology and processes. For example, we use cryogenic freezing at -80°C when preserving our burgers. This process minimises crystallisation, which keeps the properties that make our burgers unique intact. So, every time you taste them, you get the sensory experience that sparked our dream.

From a young age, as descendants of generations of butchers with a penchant for authentic flavours, we learnt the difference between flavour and true flavour—when their original character is preserved.
